En Lumière
TERROIR
High altitude south-facing slopes of gravels and rounded pebbles. Low yield (35 hl/ha). Parcel selection of 35 to 50-year-old Grenache.
VINIFICATION AND AGEING
Green harvest. Grapes picked at full polyphenolic ripeness. The date of the harvest is decided upon tasting the grape.
Traditional vinification. 15 to 20-day fermentation with a soft and qualitative extraction to release ripe tannins. The wine is aged for 12 months in concrete tanks with a carefully controlled supply of oxygen to perfect the evolution of the wine.
TASTING NOTE
Purple-red colour with deep purple tints. A powerful nose with notes of cocoa, candied raspberry and red cherry. The bright notes of jammy fruits burst forth, followed by an expressive dark chocolate and fine tannins to then reveal structure, fullness, richness, softness and complexity enduring on the palate. A uniquely elegant wine, which brings our terroir brilliantly… Into the Light.
Advice from the winemaker: drink within the next 8 years at 18-20°C with game bird or game animals, duck breast or chocolate-based desserts…
